New Roman" size="3"><br>               Ingrdients pour la Tatin : 1 fois gras de canard frais d'environ                une livre / 4 petites pommes vertes<br>               acides / 250 gr de pte feuillet / 2 cuillres  soupe de graisse                de canard / sel & poivre. <br>               <br>               1 Peler les pommes et les vider avec un vide-pomme (les garder entires)                ; les dcouper en tranches d'environ 4  5 mm (trou au centre).                Les faire revenir 7 minutes dans la graisse de canard <br>               (en 2 poles si ncessaire) puis les goutter. Dcouper le foie                gras en 8 tranches avec un couteau <br>               dont vous aurez tremp la lame dans de l'eau chaude. <br>               <br>               2 Disposer 3  4 tranches de pomme au fond de chaque moule, en les                faisant se chevaucher ; <br>               saler lgrement. Faire revenir 4 tranches de foie gras dans un                pole anti-adhsive (videmment, n'ajouter aucune graisse), juste                quelques secondes par ct. Assaisonner de sel et poivre. <br>               Dposer une tranche foie gras sur chaque couche de pomme et laisser                refroidir quelques instants. <br>               <br>               3 Etaler la pte feuillet et dcouper 4 disques lgrement plus                grands que les moules. <br>               Rabattre la pte  l'intrieur du moule (comme un petit rebord).                Mettre au frais pendant 20 minutes. <br>               <br>               4 Mettre les tatins au four prchauff  200C (th 6/7) durant 12                minutes. Pendant ce temps, faire rduire le Porto de moiti puis                ajouter le jus de truffes et la crme frache ; faire rduire encore                2 minutes puis ajouter sel & poivre. <br>               <br>               5 Sortir les tartes du four, les laisser 30 secondes sur une plaque                chaude. Les renverser sur des plats individuels.
